Pellets & Dust

One of the first things we had to do here at Smokehouse Seven was to find high quality wood sources. Although shipping logs and chunks is not practical, shipping pellets and sawdust is. It’s amazing how hard it is to find pure flavor wood pellets and dust. One VERY well know company takes cheap filler wood (beech) and adds flavor oils and calls it apple, cherry or whatever. Most other companies use blends, 60% oak – 40% apple for example. At Smokehouse Seven, our pellets and dust are 100% what they say they are.

Pellets vs Dust
Pellets generate more smoke, burn hotter and slower than sawdust, which make it easier to control temperature especially when cold smoking. Sawdust produces a cooler and cleaner smoke, perfect for cold smoking cheeses.
